- Wash the English cucumbers thoroughly under cold water, then slice them thinly into rounds or half-moons, about 1/8 inch thick.
- To your bowl of sliced cucumbers, add the chopped peanuts and white sesame seeds. If desired, sprinkle in red pepper flakes.
- In a separate mixing bowl, combine creamy peanut butter, maple syrup, and water. Whisk until smooth, then add soy sauce, sriracha, rice vinegar, and sesame oil.
- Pour the spicy peanut dressing over the cucumber mixture and toss gently to coat the cucumbers.
- Sprinkle additional sesame seeds and finely chopped green onions on top before serving.
