  • 1/2 cup Creamy peanut butter or crunchy peanut butter
  • 2 tablespoons Maple syrup or honey/agave
  • 1/4 cup Water adjust for consistency
  • 2 tablespoons Low sodium soy sauce or tamari for gluten-free
  • 1 tablespoon Sriracha or chili garlic sauce
  • 1 tablespoon Rice vinegar or apple cider vinegar
  • 1 tablespoon Sesame oil or other neutral oil

Method
 

Preparation
  1. Wash the English cucumbers thoroughly under cold water, then slice them thinly into rounds or half-moons, about 1/8 inch thick.
  2. To your bowl of sliced cucumbers, add the chopped peanuts and white sesame seeds. If desired, sprinkle in red pepper flakes.
  3. In a separate mixing bowl, combine creamy peanut butter, maple syrup, and water. Whisk until smooth, then add soy sauce, sriracha, rice vinegar, and sesame oil.
  4. Pour the spicy peanut dressing over the cucumber mixture and toss gently to coat the cucumbers.
  5. Sprinkle additional sesame seeds and finely chopped green onions on top before serving.
