  • 2 cups diced English Cucumbers or regular cucumbers, peeled and seeded
  • 1 teaspoon Salt for drawing moisture from cucumbers
  • 1 cup Yogurt or Greek yogurt for thicker texture
  • 1/2 cup Feta Cheese or goat cheese
  • 1/4 cup Fresh Herbs (e.g., dill, chives)
  • 1 tablespoon Lemon Zest
  • 1 tablespoon Lemon Juice or lime juice
  • to taste Pepper for seasoning
Sandwich
  • 8 slices Bread (whole grain or sourdough) toast before use
  • 1 cup Sprouts (optional) or substitute with lettuce
  • 1/2 cup Onion (optional) red or green onion

Method
 

Preparation
  1. Dice fresh English cucumbers and sprinkle them with salt. Allow to drain in a colander for about 15 minutes.
  2. Mix yogurt, feta cheese, chopped herbs, lemon zest, lemon juice, and pepper in a medium bowl until well combined.
  3. After draining, pat cucumbers dry and fold them into the yogurt mixture.
  4. Toast slices of bread until golden brown. Spread cucumber filling on one slice, add sprouts and onion if desired, and top with another slice.
  5. Slice assembled sandwiches in half and serve immediately.
