- Dice fresh English cucumbers and sprinkle them with salt. Allow to drain in a colander for about 15 minutes.
- Mix yogurt, feta cheese, chopped herbs, lemon zest, lemon juice, and pepper in a medium bowl until well combined.
- After draining, pat cucumbers dry and fold them into the yogurt mixture.
- Toast slices of bread until golden brown. Spread cucumber filling on one slice, add sprouts and onion if desired, and top with another slice.
- Slice assembled sandwiches in half and serve immediately.
