Step-by-Step Instructions
  1. Rinse quinoa under cold water in a fine-mesh strainer for about 1-2 minutes and drain.
  2. In a crockpot, combine the rinsed quinoa with black beans, diced tomatoes, corn, bell pepper, red onion, minced garlic, cumin, chili powder, and smoked paprika.
  3. Pour vegetable broth over the mixture, giving it a gentle stir to ensure everything is covered.
  4. Sprinkle salt and pepper, then stir to incorporate evenly.
  5. Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours.
  6. During the last 15 minutes of cooking, stir in shredded cheese.
  7. Check consistency; if too dry, add a splash of broth or water and cook for another 5-10 minutes.
  8. Fluff the casserole before serving and adjust seasoning if necessary.
