  1. Start by thinly slicing the bell peppers and onion. Set aside, ready for layering.
  2. Layer the chicken at the bottom, followed by the sliced bell peppers and onions.
  3. Pour the fire-roasted tomatoes over the top and sprinkle the fajita seasoning evenly.
  4. Pour the chicken broth over your layered ingredients, allowing it to cover everything.
  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  6. Stir in lime juice about 15 minutes before serving.
