Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1/4 cup honey
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/4 teaspoon black pepper
  • 1 cup chopped bell peppers any color
  • 1 cup chopped broccoli florets
  • 2 green onions sliced (for garnish)
  • Cooked rice for serving

Method
 

  1. Place the chicken thighs in the bottom of the crock pot.
  2. In a separate bowl, mix together the teriyaki sauce, honey, minced garlic, minced ginger, and black pepper. Pour this mixture over the chicken.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. About 30 minutes before serving, add the chopped bell peppers and broccoli to the crock pot. Stir to combine.
  5. Once cooked, shred the chicken with two forks and mix it back into the sauce.
  6. Serve over cooked rice and garnish with sliced green onions.
