Ingredients
  

  • 2 medium zucchinis sliced into 1/4-inch rounds
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 8 slices of your favorite cheese cheddar, mozzarella, or a mix
  • 4 tablespoons unsalted butter softened
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped (optional)
  • Cooking spray or additional butter for frying

Method
 

  1. Preheat your oven to 400°F. Place the zucchini slices on a baking sheet and sprinkle with salt. Let them sit for about 10 minutes to draw out moisture, then pat dry with paper towels.
  2. Set up a breading station: Place the flour in one shallow dish, beat the eggs in a second dish, and mix the breadcrumbs, garlic powder, and black pepper in a third dish.
  3. Dredge each zucchini slice in flour, shaking off the excess, then dip into the beaten eggs, and finally coat with the breadcrumb mixture. Place the breaded zucchini back on the baking sheet.
  4. Bake the zucchini in the preheated oven for 20-25 minutes, flipping halfway through, until golden and crispy.
  5. While the zucchini is baking, prepare the garlic butter by mixing the softened butter, minced garlic, and chopped parsley in a small bowl.
  6. Once the zucchini is done, heat a skillet over medium heat and add a little cooking spray or butter. Place two slices of cheese on one slice of bread, add a layer of baked zucchini, and top with another slice of cheese. Top with another slice of bread.
  7. Spread a thin layer of garlic butter on the outside of the sandwich. Grill in the skillet for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  8. Repeat with the remaining zucchini and bread to make additional sandwiches. Serve hot with your favorite dipping sauce.

Notes
