  • 1/4 cup Parmesan Cheese Nutritional yeast works for dairy-free.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper.
  2. In a large pot, bring salted water to a boil. Cook the whole peeled carrots for 12-15 minutes until fork-tender.
  3. Drain the carrots and let cool slightly. Use a glass or fork to smash each carrot until flattened.
  4. Arrange the smashed carrots on the baking sheet. Drizzle with olive oil and season with salt, pepper, garlic, garlic powder, and smoked paprika.
  5. Roast in the oven for 20-25 minutes until golden and crispy.
  6. While roasting, whisk together honey and balsamic vinegar in a small bowl.
  7. Remove the carrots from the oven, drizzle with honey-balsamic mixture and optional toppings before serving.
