  • 2 cups Zucchini Grated and squeezed to remove moisture
  • 1 teaspoon Salt
  • 1 cup All-Purpose Flour Can substitute with whole wheat or gluten-free
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Garlic Powder Optional but recommended
  • 1 teaspoon Onion Powder Optional
  • 1 teaspoon Black Pepper Adjust to taste
  • 1 cup Parmesan Cheese Grated
  • 1 cup Mozzarella Cheese Optional
  • 2 large Eggs
  • 1/2 cup Milk Can use non-dairy alternatives
  • 1/4 cup Olive Oil Can substitute with melted butter
  • 1/4 cup Fresh Parsley Optional, chopped
  • 1/2 cup Breadcrumbs Optional topping for crunch

Method
 

Instructions
  1. Prepare the Zucchini: Wash the zucchini, grate it, and squeeze out excess moisture.
  2. Mix Dry Ingredients: Combine flour, baking powder, baking soda, garlic powder, onion powder, black pepper, and salt.
  3. Combine Wet Ingredients: Whisk eggs, then mix in milk and olive oil. Add parsley if using.
  4. Fold Together Ingredients: Combine wet and dry mixtures, then fold in zucchini, Parmesan, and mozzarella.
  5. Preheat the Oven: Set to 375°F (190°C) and prepare the muffin tin.
  6. Fill the Muffin Cups: Scoop batter into muffin tin, filling each cup about 3/4 full.
  7. Bake the Muffins: Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  8. Cool and Serve: Cool muffins for 5 minutes in the tin, then transfer to a wire rack.
