- Prepare the Zucchini: Wash the zucchini, grate it, and squeeze out excess moisture.
- Mix Dry Ingredients: Combine flour, baking powder, baking soda, garlic powder, onion powder, black pepper, and salt.
- Combine Wet Ingredients: Whisk eggs, then mix in milk and olive oil. Add parsley if using.
- Fold Together Ingredients: Combine wet and dry mixtures, then fold in zucchini, Parmesan, and mozzarella.
- Preheat the Oven: Set to 375°F (190°C) and prepare the muffin tin.
- Fill the Muffin Cups: Scoop batter into muffin tin, filling each cup about 3/4 full.
- Bake the Muffins: Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Cool and Serve: Cool muffins for 5 minutes in the tin, then transfer to a wire rack.
