- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine chopped spinach, shredded Parmesan, salt, pepper, and optional spices.
- Roll out the thawed puff pastry on a lightly floured surface until about 1/8 inch thick.
- Slice the rolled pastry into 1-inch-wide strips.
- Place a spoonful of filling at one end of each pastry strip, fold over, and twist.
- Beat one large egg and brush each twist with the egg wash.
