Step-by-Step Instructions for Chicken Romano
  1. Prepare the chicken by cutting it into thin cutlets, approximately ½-inch thick.
  2. Set up the breading station with flour, egg and milk mixture, and breadcrumb mixture.
  3. Dredge the chicken cutlets in flour, then egg wash, and finally in the breadcrumb mixture.
  4. Heat the olive oil and butter in a skillet until the temperature reaches about 350°F.
  5. Fry the chicken cutlets for about 3–4 minutes on each side until golden brown.
  6. Bake the fried cutlets in a preheated oven at 375°F for an additional 10 minutes.
  7. Let the chicken rest for a few minutes, garnish with parsley, and serve with lemon wedges.
