Chicken Preparation
- Butterfly the chicken and season with salt, pepper, garlic powder, and smoked paprika. Heat a nonstick pan and cook for 4 minutes on each side. Brush with BBQ sauce and cook for another 4 minutes until done. Slice into strips.

- Mix coleslaw mix, red onion, mayo, lemon juice, honey, and mustard in a bowl. Stir until well combined and set aside.
Sweet Potato Fries Preparation
- Preheat air fryer to 400°F. Slice sweet potato into fries, coat with avocado oil, cornstarch, and spices. Cook in the air fryer for 8-10 minutes, shaking halfway through.
Wrap Assembly
- Lay a tortilla flat, add spinach, BBQ chicken strips, and coleslaw. Fold in the sides and roll up tightly. Toast in a pan for 2-3 minutes on each side until golden.
