Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, mix panko breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. In another bowl, whisk together Dijon mustard and olive oil until smooth.
  4. Pat cod fillets dry and place them on the prepared baking sheet.
  5. Brush each cod fillet with the mustard mixture evenly.
  6. Sprinkle the breadcrumb mixture over the fillets, pressing down gently.
  7. Bake in the preheated oven for 12-15 minutes, until golden and flaky.
  8. Remove from oven, let rest for a few minutes, and garnish with lemon wedges and parsley.
