  • 4 cups Ripe Tomatoes Can use canned diced tomatoes
  • 1 cup Heavy Cream Substitute with Greek yogurt for a lighter version
  • 4 cloves Fresh Garlic Minced
  • 2 tablespoons Olive Oil Extra virgin recommended
  • 1 tablespoon Fresh Basil Chopped; dried basil can be a substitute
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper Freshly cracked

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water. Add pasta and cook until al dente (8-10 minutes). Drain and reserve a cup of pasta water.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until golden brown (1-2 minutes).
  3. Stir in diced tomatoes along with salt and pepper. Simmer for 5 minutes to develop the sauce.
  4. Lower heat and add heavy cream. Stir gently and heat through for 2-3 minutes.
  5. Toss drained pasta with the sauce in the skillet, adding reserved pasta water as needed for desired consistency.
  6. Serve garnished with chopped basil and optional grated Parmesan cheese.
