Step-by-Step Instructions
- Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter.
- In a medium saucepan, melt 4 tablespoons of butter over medium heat. Whisk in ¼ cup of flour for 1-2 minutes until golden.
- Gradually pour in 2 cups of milk while whisking to avoid lumps; simmer for 5-7 minutes until thickened.
- Remove from heat and add 2 cups of shredded sharp cheddar cheese, stirring until smooth. Season with salt and cayenne pepper.
- Slice 4-5 medium potatoes thinly and layer half in the baking dish. Pour half of the cheese sauce over them.
- Repeat with the remaining potatoes and cheese sauce, gently settling layers.
- Sprinkle an additional cup of shredded cheese on top.
- Cover with foil and bake for 45 minutes. Then, remove foil and bake for another 15-20 minutes until golden.
- Let rest for 10-15 minutes before serving. Garnish with chopped green onions if desired.
