- Begin by carefully removing the bones from the sardines using your hands or a fork. Place the fillets into a medium mixing bowl.
- Use a fork to mash the sardines in the bowl into a paste-like consistency.
- Incorporate the lemon zest, lemon juice, Greek yogurt, softened unsalted butter, chopped capers, chives, dill, kosher salt, and freshly ground black pepper into the bowl with the mashed sardines.
- Once combined, cover the bowl tightly with plastic wrap or a lid and place it in the refrigerator. Allow the mixture to chill for at least one hour.
- When ready to serve, take the Sardine Rillettes out of the fridge and allow it to come to room temperature for about 10 to 15 minutes.
