Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (218°C).
  2. Cut the cauliflower into small florets, rinse and drain.
  3. Melt the butter in a large skillet over medium-low heat, add sliced onion and sauté until soft.
  4. Stir in the olive oil and flour, cooking for about 2 minutes until it forms a paste.
  5. Gradually add milk, stirring to avoid lumps, then mix in pumpkin purée, spices until smooth.
  6. Reduce heat, add shredded cheese, stirring until melted and combined.
  7. Fold in prepared cauliflower florets, ensuring they are coated with the cheese sauce.
  8. Transfer mixture to a greased baking dish, bake for 25-30 minutes until golden and bubbly.
  9. Garnish with fried sage, serve warm.
