Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering but not smoking.
  2. Add 1 pound of sliced beef sirloin to the pot, making sure to spread it out evenly. Sauté for about 5–7 minutes, until browned and cooked through.
  3. In the same pot, add 1 diced onion, 1 chopped green bell pepper, and 3 minced garlic cloves. Sauté for about 4–5 minutes until tender and fragrant.
  4. Return the browned beef to the pot along with 4 cups of beef broth. Stir well and allow to come to a gentle simmer for about 15 minutes.
  5. Stir in 1 cup of heavy cream and 1 cup of shredded provolone cheese gradually, allowing the cheese to melt.
  6. Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh herbs if desired.
