- Preheat the oven to 350°F (175°C).
- In a large skillet, melt a tablespoon of butter over medium heat. Add 1 pound of cubed chicken breast, seasoning with salt and pepper, and cook until the chicken is no longer pink, about 5–7 minutes.
- In the same skillet, reduce the heat to low and add 1 cup of heavy cream, 8 oz. of cream cheese, and 2 minced garlic cloves. Whisk until smooth and creamy, about 3–5 minutes.
- In a greased baking dish, layer the cooked chicken, then scatter veggies if using, and pour the creamy sauce over. Top with 1 cup of shredded cheddar cheese.
- Bake for 25–30 minutes until bubbly and golden brown.
- Let it cool for 5–10 minutes, then serve and enjoy.
