  • 1 cup Parmesan Cheese Optional for vegan version

  • 2 tablespoons Butter Can substitute with vegan butter
  • 2 cups Vegetable Broth
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • Spices (Salt, Pepper, Chili Flakes) To taste

Method
 

Step-by-Step Instructions
  1. Blanch the fresh green beans in boiling water for 3-4 minutes, then transfer them to ice water.
  2. In a skillet, melt butter and sauté onions and garlic until translucent. Add mushrooms and cook for 5 minutes.
  3. Sprinkle in flour, gradually add vegetable broth, and season. Cook until the sauce thickens.
  4. Combine blanched green beans with the mushroom sauce in a baking dish. Mix in Parmesan if using.
  5. Preheat oven to 375°F. Pour mixture into a baking dish, top with fried shallots, cover with foil and bake for 20 minutes.
  6. Uncover and bake for an additional 7-10 minutes until the topping is golden brown.
  7. Let the casserole sit for a few minutes before serving.
