In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, and a pinch of salt.
Blend the mixture until smooth. If the hummus is too thick, add water one tablespoon at a time until you reach your desired consistency.
Taste and adjust the seasoning, adding more salt or lemon juice if needed.
Transfer the hummus to a serving bowl, drizzle with a little olive oil, and sprinkle with paprika and fresh parsley if desired.
Serve with pita bread, fresh vegetables, or crackers.
