- Preheat your oven to 400°F (200°C). Trim the tops off the heads of garlic, drizzle with olive oil, and wrap each head in aluminum foil. Roast in the oven for 40-50 minutes until soft and golden.
- Once the garlic has cooled slightly, squeeze the roasted cloves into a mixing bowl. Add the cream cheese and sour cream, then mix until smooth and creamy using a hand mixer or spatula.
- Gently fold in shredded mozzarella and half of the grated Parmesan cheese. Season with salt and pepper to taste, ensuring everything is well combined.
- Preheat your oven to 350°F (175°C). Spread the dip mixture evenly in a greased baking dish and sprinkle the remaining Parmesan cheese on top. Bake for about 25-28 minutes.
- Remove from the oven and let cool for about 5 minutes. Garnish with parsley and serve with crostini or crackers.
