  • 2 cloves Garlic minced
  • 4 cups Mixed Mushrooms (cremini, shiitake, button) or any preferred mixture
For the Soup
  • 4 cups Low-Sodium Vegetable Broth or chicken broth for a non-vegetarian version
  • 1 cup Cottage Cheese full-fat recommended
  • 1 teaspoon Fresh Thyme dried can also be used

For Garnish
  • 1 tablespoon Fresh Parsley chopped

Method
 

Step-by-Step Instructions
  1. In a large pot, melt 2 tablespoons of butter over medium heat. Add 1 diced yellow onion and 2 minced garlic cloves, stirring frequently for 4-5 minutes until translucent.
  2. Stir in 4 cups of mixed mushrooms and continue cooking for 8-12 minutes until golden brown.
  3. Pour in 4 cups of vegetable broth and add 1 teaspoon of fresh thyme. Bring to a boil, then let it simmer uncovered for 15 minutes.
  4. Remove from heat, cool slightly for 5 minutes, and use an immersion blender to pulse the mixture 4-6 times.
  5. Stir in 1 cup of cottage cheese and blend for 30-45 seconds. Season with salt and black pepper.
  6. Ladle into bowls and garnish with freshly chopped parsley. Serve hot.
