  • 1 teaspoon fresh ginger grated

  • 2 cups cooked rice jasmine, basmati, or cauliflower rice for low-carb
For Cooking and Garnish
  • 1 tablespoon vegetable oil (or coconut oil) for sautéing
  • salt and pepper to taste
  • fresh cilantro (or green onions) for garnish

Step-by-Step Instructions
  1. Heat 1 tablespoon of vegetable or coconut oil in a large skillet over medium heat.
  2. Add 1 pound of diced boneless, skinless chicken, seasoning it with salt and pepper. Cook until golden brown, about 5 to 7 minutes.
  3. Incorporate 2 cloves of minced garlic and 1 teaspoon of grated ginger into the pan. Stir for about 1 minute.
  4. Pour in 1 can of coconut milk, 1 tablespoon of soy sauce, and 1 teaspoon of lime juice. Simmer for 5 to 7 minutes.
  5. Prepare 2 cups of cooked rice according to package instructions.
  6. Assemble by spooning the creamy chicken mixture over a bed of rice.
  7. Garnish with fresh cilantro or green onions before serving.
