  • 4 qt Water salted for boiling
For the Protein
  • 2 pcs Chicken Breasts or rotisserie chicken as a substitute
For the Crunch
  • 4 cups Romaine Lettuce chopped into medium-sized pieces
  • 1 cup Croutons store separately to maintain texture
For the Creamy Base
  • 1 cup Parmesan Cheese shredded, try dairy-free for vegan option
  • 1 cup Caesar Dressing store-bought or homemade
For the Flavor Finish
  • 1 tsp Black Pepper freshly cracked is best
  • 2 pcs Lemon Wedges serve on the side

Cooking Steps
  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add choice of pasta and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Prepare the Chicken: Season chicken breasts with salt, pepper, and olive oil. Grill or pan-sear over medium heat for 6-7 minutes per side until done. Slice into bite-sized pieces.
  3. Chop the Romaine: Wash and dry the romaine lettuce. Chop into medium-sized pieces.
  4. Make the Dressing: In a large bowl, mix Caesar dressing or make a homemade version with mayonnaise, lemon juice, anchovy paste, Dijon mustard, and Worcestershire sauce.
  5. Toss Ingredients Together: In a large bowl, combine cooled pasta, chopped chicken, romaine, croutons, and Parmesan cheese. Drizzle with dressing and toss gently.
  6. Chill the Salad: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  7. Serve and Garnish: Toss gently before serving. Add extra Parmesan and a sprinkle of black pepper. Serve lemon wedges on the side.
