Cooking Steps
- Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add choice of pasta and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
- Prepare the Chicken: Season chicken breasts with salt, pepper, and olive oil. Grill or pan-sear over medium heat for 6-7 minutes per side until done. Slice into bite-sized pieces.
- Chop the Romaine: Wash and dry the romaine lettuce. Chop into medium-sized pieces.
- Make the Dressing: In a large bowl, mix Caesar dressing or make a homemade version with mayonnaise, lemon juice, anchovy paste, Dijon mustard, and Worcestershire sauce.
- Toss Ingredients Together: In a large bowl, combine cooled pasta, chopped chicken, romaine, croutons, and Parmesan cheese. Drizzle with dressing and toss gently.
- Chill the Salad: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve and Garnish: Toss gently before serving. Add extra Parmesan and a sprinkle of black pepper. Serve lemon wedges on the side.
