- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, unroll the thawed puff pastry, smoothing out any creases.
- Spread the cranberry sauce evenly over the puff pastry, leaving about a half-inch border. Layer the thinly sliced brie on top and sprinkle fresh thyme leaves across the cheese.
- Using a sharp knife or pizza cutter, slice the pastry into eight equal strips.
- Fold each strip in half lengthwise, encasing the filling. Gently twist each strip and pinch the ends to seal securely.
- Arrange the twists on the prepared baking sheet, brush the tops with the beaten egg, and bake for 18–22 minutes or until puffy and golden brown.
- Remove from the oven, drizzle with honey if desired, allow to cool slightly, then serve warm.
