Preparation Steps
- Preheat your oven to 400°F (200°C). Wash sweet potatoes under running water and pierce with a fork. Bake for 45-60 minutes.
- Once cool, slice sweet potatoes in half and scoop out most of the flesh, leaving a 1/4 inch border. Mash the flesh until creamy.
- Add chopped apples, cranberries, brown sugar, cinnamon, butter, and salt to the mashed sweet potato. Mix until well combined.
- Spoon the mixture back into sweet potato skins. Arrange on a baking sheet.
- Lower oven temperature to 350°F (175°C) and bake for an additional 20-25 minutes. Keep an eye on them as the cranberries burst.
- Remove from oven and let cool slightly before serving.
