Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Wash sweet potatoes under running water and pierce with a fork. Bake for 45-60 minutes.
  2. Once cool, slice sweet potatoes in half and scoop out most of the flesh, leaving a 1/4 inch border. Mash the flesh until creamy.
  3. Add chopped apples, cranberries, brown sugar, cinnamon, butter, and salt to the mashed sweet potato. Mix until well combined.
  4. Spoon the mixture back into sweet potato skins. Arrange on a baking sheet.
  5. Lower oven temperature to 350°F (175°C) and bake for an additional 20-25 minutes. Keep an eye on them as the cranberries burst.
  6. Remove from oven and let cool slightly before serving.
