Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Place the sweet potatoes on a baking sheet lined with parchment paper. Bake for 45-50 minutes until tender.
  3. In a skillet, melt butter over medium heat. Add diced apples, cranberries, nutmeg, cinnamon, and salt. Sauté for 5-7 minutes until apples are tender.
  4. Stir in maple syrup and cook for an additional 2 minutes.
  5. Once cool, slice sweet potatoes in half and scoop out the flesh.
  6. Combine sweet potato flesh with half of the cranberry-apple filling until smooth.
  7. Stuff the sweet potato skins with the mashed filling and top with remaining cranberry-apple mixture.
  8. Return to the oven and bake for an additional 10-12 minutes until heated through.
