  • 4 cups cabbage finely shredded, can be green or red
  • 2 medium fresh apples diced, use Granny Smith, Honeycrisp, or Fuji
  • 1 cup dried cranberries adjust based on taste preference
For the Dressing
  • ½ cup Greek yogurt or mayonnaise cream base
  • 2 tablespoons honey or maple syrup for vegan option
  • 2 tablespoons vinegar apple cider or white wine
Optional Add-ins
  • 1 cup chopped walnuts or sunflower seeds for extra crunch
  • 1 teaspoon celery seeds for flavor enhancement
  • 1 tablespoon lemon juice for brightness

Method
 

Preparation
  1. Finely shred about 4 cups of cabbage and dice 2 apples, then set aside in a mixing bowl.
  2. Add 1 cup of dried cranberries to the cabbage and apples, and gently toss together.
  3. In a separate bowl, whisk together ½ cup of Greek yogurt or mayonnaise, 2 tablespoons of honey, and 2 tablespoons of vinegar until smooth.
  4. Pour the dressing over the cabbage, apple, and cranberry mixture and toss until well coated.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
