Ingredients
  

  • 4 salmon fillets 6 ounces each
  • 1 cup lump crab meat drained and picked for shells
  • 1/2 cup cream cheese softened
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the crab meat, cream cheese, breadcrumbs, Parmesan cheese, parsley, Dijon mustard, garlic powder, lemon juice, salt, and pepper. Mix until well combined.
  3. Place the salmon fillets skin-side down on a cutting board. Using a sharp knife, make a pocket in each fillet by slicing horizontally, being careful not to cut all the way through.
  4. Stuff each salmon fillet with the crab mixture, pressing gently to secure the filling inside.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed salmon fillets, cooking for about 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from the oven and let rest for a few minutes before serving.
