  • 2 tablespoons vegetable oil for sautéing
  • 4 stalks green onions chopped, save some for garnish
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 6 cups chicken or vegetable broth based on dietary needs
  • 3 tablespoons soy sauce adjust to taste
  • 1 tablespoon sesame oil for flavor
  • 2 tablespoons rice vinegar to balance flavors
  • 1 tablespoon miso paste use sparingly
  • 1 pinch red pepper flakes adjust for spiciness
For the Soup
  • 12-16 pieces potstickers fresh or frozen
  • 2 cups bok choy chopped
  • 1 cup shiitake mushrooms sliced
  • 1-2 pieces carrots julienned
  • to taste salt for seasoning
  • to taste pepper for seasoning
  • fresh cilantro for garnish

Method
 

Cooking Instructions
  1. In a large pot, heat vegetable oil over medium heat. Add half of the chopped green onions and sauté for 2 minutes.
  2. Stir in minced garlic and grated ginger and sauté for an additional minute.
  3. Pour in broth, soy sauce, sesame oil, rice vinegar, miso paste, and red pepper flakes. Bring to a gentle boil.
  4. Reduce heat to a simmer and add potstickers. Cook according to package instructions.
  5. Add chopped bok choy, sliced shiitake mushrooms, and julienned carrots. Poach for 2-3 minutes.
  6. Taste the soup and adjust seasoning with salt and pepper.
  7. Ladle the soup into bowls, garnish with remaining green onions and cilantro, and serve warm.
