- Reduce heat to a simmer and add potstickers. Cook according to package instructions.
- Add chopped bok choy, sliced shiitake mushrooms, and julienned carrots. Poach for 2-3 minutes.
- Taste the soup and adjust seasoning with salt and pepper.
- Ladle the soup into bowls, garnish with remaining green onions and cilantro, and serve warm.
