  • 2 tablespoons butter olive oil for dairy-free option
  • 1 medium onion diced; substitute with shallots if desired
  • 2 cloves garlic minced; fresh recommended
  • 2 tablespoons all-purpose flour can replace with cornstarch or gluten-free flour
  • 4 cups chicken or vegetable stock use water with bouillon if stock is unavailable
For Seasoning
  • 1 teaspoon kosher salt adjust to taste
  • 0.5 teaspoon black pepper adjust to taste
  • 1 teaspoon paprika or nutmeg adds complexity
For the Soup
  • 4 cups broccoli florets fresh is best, but frozen works
  • 1 medium carrot grated; optional
  • 1 cup half & half or cream replace with milk for lighter soup
  • 2 cups cheddar cheese freshly grated for best melting

Preparation Steps
  1. In a large pot, melt 2 tablespoons of butter over medium-high heat. Add 1 diced onion and cook for 3-4 minutes until translucent.
  2. Stir in 2 minced garlic cloves and sauté for 1 minute until aromatic.
  3. Whisk in 2 tablespoons of all-purpose flour and cook for 1-2 minutes.
  4. Gradually pour in 4 cups of stock while whisking. Bring to a boil.
  5. Add 4 cups of fresh broccoli florets, 1 grated carrot, and season with 1 tsp kosher salt, 1/2 tsp black pepper, and 1 tsp paprika or nutmeg. Simmer for 15 minutes.
  6. Stir in 1 cup of half & half or cream and heat through for 2-3 minutes.
  7. Remove from heat and mix in 2 cups of freshly grated cheddar cheese until melted.
  8. Ladle the warm soup into bowls and enjoy immediately.
