Preparation Steps
- In a large pot, melt 2 tablespoons of butter over medium-high heat. Add 1 diced onion and cook for 3-4 minutes until translucent.
- Stir in 2 minced garlic cloves and sauté for 1 minute until aromatic.
- Whisk in 2 tablespoons of all-purpose flour and cook for 1-2 minutes.
- Gradually pour in 4 cups of stock while whisking. Bring to a boil.
- Add 4 cups of fresh broccoli florets, 1 grated carrot, and season with 1 tsp kosher salt, 1/2 tsp black pepper, and 1 tsp paprika or nutmeg. Simmer for 15 minutes.
- Stir in 1 cup of half & half or cream and heat through for 2-3 minutes.
- Remove from heat and mix in 2 cups of freshly grated cheddar cheese until melted.
- Ladle the warm soup into bowls and enjoy immediately.
