Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) to prepare for roasting.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  3. Season chicken thighs with salt, pepper, onion powder, garlic powder, smoked paprika, thyme, and rosemary.
  4. Sear chicken thighs skin-side down for 5-7 minutes until golden brown and crispy.
  5. Remove chicken and sauté sliced red onion for 3-4 minutes until softened.
  6. Add sliced Honeycrisp apples and cook for 2-3 minutes until slightly tender.
  7. Pour in apple cider, broth (or wine), and Dijon mustard, stir to combine, and simmer for 2-3 minutes.
  8. Return chicken to the skillet, skin-side up, and roast in the oven for 25-30 minutes until cooked through.
  9. Let chicken rest for 5 minutes and simmer sauce if desired to thicken.
