Gently fold in the fresh blueberries and sweetener if using, being careful not to break the berries.
Spoon the batter onto the prepared baking sheet, forming 8 equal mounds.
Bake in the preheated oven for 25-30 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Allow the cloud bread to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
