- In a medium-sized mixing bowl, add rolled oats, coconut milk, Greek yogurt, shredded coconut, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Stir thoroughly until well combined. This step should take about 5 minutes.
- If you’re using sliced bananas, gently fold them into the oat mixture using a spatula, being careful not to mash the bananas.
- Divide the coconut cream pie oat mixture evenly between two clean jars or containers, leaving space at the top for expansion.
- Securely seal each lid and place the jars in the refrigerator to chill overnight, or for at least 4 hours.
- When ready to enjoy, take the jars from the fridge, stir the mixture well, and serve. Top with fresh whipped cream and additional shredded coconut if desired.
