- Peel the sweet potatoes and cut them into uniform 1-inch cubes, placing them in a bowl of cold water.

- Drain the sweet potato cubes, pat them dry, and spread them on the prepared sheet pan. Pour the cinnamon butter mixture over them and toss to coat.
