Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar for coating
  • Vegetable oil for frying

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or butter.
  2. In a large mixing bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. In a small bowl, combine the ground cinnamon and 1/4 cup sugar for the coating.
  6. Using a spoon, fill each muffin cup about halfway with the batter.
  7. Bake in the preheated oven for 15-18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the cruffins to cool for about 5 minutes in the pan, then carefully remove them and let them cool on a wire rack.
  9. While still warm, roll each cruffin in the cinnamon-sugar mixture until fully coated.
  10. Serve warm and enjoy!
