Ingredients
  

  • 1 cup unsalted butter melted
  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup fresh strawberries hulled and sliced
  • 1/2 cup semi-sweet chocolate chips for topping
  • 1 tablespoon coconut oil for topping

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, combine the melted butter and granulated sugar. Stir until well combined.
  3. Add the vanilla extract and eggs to the butter-sugar mixture, whisking until smooth.
  4. In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the chocolate chips and sliced strawberries gently.
  6. Pour the brownie batter into the prepared baking pan, spreading it evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow the brownies to cool completely in the pan on a wire rack.
  9. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  10. Once the brownies are cool, drizzle the melted chocolate over the top. Let it set for about 15 minutes before slicing into squares.
