Ingredients
  

  • 1 pound ground chicken
  • 1 medium zucchini grated (about 1 cup)
  • 1 cup corn kernels fresh, frozen, or canned
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil for cooking
  • Burger buns optional
  • Lettuce tomato, and condiments (optional for serving)

Method
 

  1. In a large mixing bowl, combine the ground chicken, grated zucchini, corn, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, paprika, salt, and black pepper. Mix until all ingredients are well incorporated.
  2. Divide the mixture into 4 equal portions and shape each portion into a patty.
  3. Heat olive oil in a large skillet over medium heat. Once hot, add the patties to the skillet. Cook for about 5-6 minutes on each side, or until the internal temperature reaches 165°F and the patties are golden brown.
  4. If using burger buns, toast them lightly in the skillet after the patties are cooked.
  5. Serve the burgers on the buns with lettuce, tomato, and your favorite condiments, if desired.
