  • 1/4 cup tahini or almond butter/sunflower seed butter as a substitute
  • 1/4 cup lower-sodium tamari or soy sauce
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 tablespoon maple syrup or honey/agave syrup
  • 2 tablespoons toasted sesame oil or olive oil
  • 1 clove garlic grated; or garlic powder
Salad
  • 4 cups chopped Napa cabbage or green cabbage/kale
  • 2 cups shredded rotisserie chicken or cooked chicken breast/tofu
  • 1 cup shredded matchstick carrots or grated whole carrots
  • 1/2 cup finely chopped green onions or chives/shallots
  • 1 cup roasted, salted cashews or sunflower seeds for nut-free
  • 1/2 cup finely chopped fresh cilantro or parsley
  • optional toasted sesame seeds or poppy seeds for garnish

Method
 

Preparation
  1. In a glass jar or large measuring cup, add tahini, lower-sodium tamari, rice vinegar, maple syrup, toasted sesame oil, and grated garlic. Whisk until smooth.
  2. In a large mixing bowl, combine chopped Napa cabbage, shredded rotisserie chicken, shredded matchstick carrots, and finely chopped green onions. Mix gently.
  3. Fold in roasted salted cashews and finely chopped fresh cilantro into the salad mixture.
  4. Pour the prepared dressing over the salad and gently toss everything together until well-coated.
  5. Serve immediately, or store in an airtight container in the fridge, separating the cashews until serving.
