  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese softened
  • 1/2 cup almond flour
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup sliced pepperoni
  • 1/4 cup marinara sauce for dipping
  • 1 tablespoon olive oil for brushing

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the shredded mozzarella cheese and cream cheese. Microwave the mixture for about 30 seconds, then stir until smooth.
  3. In a separate bowl, mix the almond flour, egg, Italian seasoning, garlic powder, and salt until well combined. Add the melted cheese mixture to the dry ingredients and stir until a dough forms.
  4. Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick.
  5. Remove the top layer of parchment paper and evenly distribute the pepperoni over the dough. Roll the dough tightly from one end to the other, using the parchment paper to help.
  6. Slice the roll into 1-inch pieces and place them cut-side up on the prepared baking sheet. Brush the tops with olive oil.
  7. Bake for 15-20 minutes, or until golden brown and bubbly.
  8. Serve warm with marinara sauce for dipping.
