Ingredients
  

For the Meatloaf Base
  • 1 lb Ground Beef 80% lean for best moisture
  • 1 cup Breadcrumbs Use gluten-free options if needed
  • 1 large Egg Acts as a binder
  • 1/2 cup Milk Whole or 2% milk preferred
  • 1 medium Onion finely chopped
  • 1 tsp Garlic Powder Fresh garlic can be used for more flavor
  • 1 tsp Salt Adjust based on dietary preferences
  • 1/2 tsp Black Pepper Freshly ground is ideal
  • 2 tbsp Worcestershire Sauce Soy sauce can be a substitute
  • 1/2 cup Ketchup Reserve half for topping
For the Mashed Potato Topping
  • 2 cups Mashed Potatoes Homemade is preferred
  • 1 cup Cheddar Cheese shredded, can use different cheeses
  • 1/2 cup Bacon crumbled
For Garnish
  • 2 tbsp Green Onions/Chives optional, for garnish

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C).
  2. Combine the ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup in a large mixing bowl. Transfer the meat mixture into a greased 9x9-inch baking dish, pressing it down evenly, and spread the remaining ketchup as a topping.
  3. Bake the meatloaf for about 20 to 25 minutes, or until it's cooked through.
  4. Spread a layer of prepared mashed potatoes on top of the meatloaf, then sprinkle shredded cheddar cheese and crumbled bacon over the potatoes.
  5. Return to the oven and bake for an additional 10 to 15 minutes, or until the cheese is bubbly and golden.
  6. Let the casserole cool for 5 to 10 minutes, then garnish with chopped green onions or chives before serving.
