Ingredients
  

  • 2 large zucchinis cut into 1-inch thick slices
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the olive oil, minced garlic, salt, black pepper, and Italian seasoning. Mix well.
  3. Add the zucchini slices to the bowl and toss until they are evenly coated with the garlic oil mixture.
  4. Arrange the zucchini slices in a single layer on the prepared baking sheet.
  5. Bake in the preheated oven for 15 minutes.
  6. Remove the baking sheet from the oven and sprinkle the mozzarella and Parmesan cheeses evenly over the zucchini slices.
  7. Return the baking sheet to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Once done, remove from the oven and let cool for a couple of minutes. Garnish with fresh parsley before serving.
