  • 1 teaspoon Paprika
  • 1 pinch Cayenne Pepper Optional.

  • 1 can Diced Tomatoes Drained.
  • 1 tablespoon Lime Juice
  • 1 bunch Fresh Cilantro Reserve some for garnish.
For Serving
  • 2 cups Steamed Rice Ideal for soaking up the sauce.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add 1 diced onion and sauté for 3–4 minutes until soft and translucent.
  3. Incorporate 3 minced garlic cloves along with 1 teaspoon of ground cumin, 1 teaspoon of paprika, and a pinch of cayenne pepper. Stir for 1 minute.
  4. Add 1 pound of cubed chicken breast and cook for 5–7 minutes until browned.
  5. Season with salt and pepper to taste and stir well.
  6. Pour in 1 can of coconut milk, stirring to combine. Simmer gently over medium heat for 3–4 minutes.
  7. Stir in 1 can of drained diced tomatoes and the juice of 1 lime, simmer for another minute.
  8. Reduce heat to low, cover partially, and simmer for 15–20 minutes until sauce thickens.
  9. Stir in chopped cilantro and adjust seasoning as needed.
  10. Serve over steamed rice and garnish with additional cilantro.
