Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water. Cook short pasta until al dente, about 8-10 minutes. Drain and set aside.
  2. In a medium saucepan, melt 4 tablespoons of unsalted butter. Whisk in 4 tablespoons of flour for about 1 minute until light golden.
  3. Slowly pour in 2 cups of heavy cream while whisking to avoid lumps. Stir until thickened, about 3-4 minutes. Reduce heat, add Boursin cheese and cheddar, stirring until melted.
  4. Combine the cooked pasta with the cheese sauce, stirring gently for 2 minutes to coat. Let rest for a few minutes.
  5. In a skillet, melt 2 more tablespoons of butter. Add 1 cup of breadcrumbs, cooking until golden brown and crispy.
  6. Transfer mac and cheese to a baking dish, top with breadcrumbs. Serve immediately or broil for 2-3 minutes for a golden crust.
