Ingredients
  

  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 1/4 cup vodka or your favorite liqueur
  • 1 cup fresh blueberries
  • 1 cup strawberries hulled and sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar

Method
 

  1. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. In a separate bowl, whisk together the heavy cream and milk until well combined.
  3. Gradually add the cream mixture to the cream cheese mixture, mixing until fully incorporated.
  4. In another bowl, combine the blueberries, lemon juice, and 1 tablespoon of sugar. Gently mash the blueberries with a fork to release some juices but leave some whole for texture.
  5. Repeat the process with the strawberries in a separate bowl.
  6. To assemble the popsicles, fill each popsicle mold about 1/3 full with the cheesecake mixture.
  7. Add a layer of the blueberry mixture, followed by another layer of cheesecake mixture, then a layer of the strawberry mixture.
  8. Repeat the layers until the molds are full, finishing with the cheesecake mixture on top.
  9. Insert popsicle sticks and freeze for at least 6 hours or until completely solid.
  10. To remove the popsicles, run warm water over the outside of the molds for a few seconds.

Notes
