- In a large mixing bowl, whisk together olive oil, soy sauce, minced garlic, fresh thyme, smoked paprika, black pepper, salt, lemon juice, and cayenne pepper if desired.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or ideally overnight.
- About 15 minutes before grilling, preheat your grill to medium-high heat, around 400°F (200°C). Ensure the grates are clean and lightly oiled.
- Remove the chicken thighs from the marinade, letting excess drip off. Grill skin-side down for 6-8 minutes, then flip and grill for another 6-8 minutes until the internal temperature reaches 165°F (75°C).
- After grilling, transfer the chicken thighs to a plate and let them rest for about 5 minutes before serving.
