Ingredients

Ice Cream Base
  • 2 cups Cottage Cheese Can be swapped with silken tofu for dairy-free
  • 1 cup Blueberries Fresh or frozen
  • 2-4 tablespoons Sweetener (Honey or Maple Syrup) Adjust according to taste
  • 1 teaspoon Vanilla Extract Pure vanilla recommended
  • 1 tablespoon Lemon Juice Fresh preferred
Optional Toppings
  • 1 cup Granola For added crunch
  • 1/2 cup Fresh Blueberries For topping
  • 1 cup Coconut Whipped Cream Optional for serving

Equipment

  • High-speed blender
  • Freezer-safe container
  • spatula

Method

Preparation Steps
  1. Begin by placing the cottage cheese into a high-speed blender. Blend on high for about 30 seconds until the mixture is silky smooth and creamy, ensuring there are no lumps.
  2. Next, add the fresh or frozen blueberries to the blender along with your choice of sweetener, vanilla extract, and lemon juice. Blend on medium speed for approximately 15-20 seconds until the blueberries are just combined but still visible.
  3. Once blended, pour the blueberry mixture into a freezer-safe container, using a spatula to scrape down the sides and ensure nothing is left behind.
  4. Place the container in the freezer and allow the mixture to freeze for at least 4 hours until scoopable.
  5. To serve, let the ice cream sit at room temperature for about 5 minutes to soften, then scoop into bowls.
