  • 1 cup Rolled Oats quick oats can be substituted
  • 1 large Egg can be replaced with a flax egg
  • 1/4 cup Honey or Maple Syrup adjust based on sweetness preference
  • 1 teaspoon Vanilla Extract can substitute with almond extract
  • 1 tablespoon Lemon Zest fresh zest preferred
  • 1 teaspoon Baking Powder ensure it’s fresh
  • 1 pinch Salt
  • 1 cup Fresh or Frozen Blueberries do not thaw frozen berries

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 24-cup mini muffin pan by greasing each cup.
  2. Blend all ingredients except for blueberries in a blender until smooth.
  3. Pour the batter into a mixing bowl and gently fold in the blueberries.
  4. Allow the mixture to rest for about 5 minutes.
  5. Fill each muffin cup about 3/4 full with the batter.
  6. Bake for 18-22 minutes until firm and light golden.
  7. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
