Ingredients
  

For the Salad
  • 8 oz Elbow Macaroni
  • 1 lb Ground Beef can substitute ground turkey or plant-based meat
  • 1 cup Shredded Cheddar Cheese can use low-fat cheese
  • 1 cup Diced Pickles relish can be substituted
  • 1/2 cup Diced Red Onion green onions can be a milder alternative
  • 2 cups Shredded Lettuce add just before serving for freshness
  • 1 cup Chopped Tomatoes optional, can use any seasonal veggie
For the Dressing
  • 1 cup Mayonnaise can substitute Greek yogurt
  • 1/4 cup Ketchup
  • 2 tbsp Yellow Mustard
  • 1/4 cup Sweet Pickle Relish
  • 1 tbsp White Vinegar
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika

Method
 

Cooking Steps
  1. Cook the elbow macaroni in salted boiling water according to package instructions (about 8-10 minutes) until al dente. Drain and rinse under cold water.
  2. In a skillet over medium heat, brown the ground beef for about 6-8 minutes until fully cooked, then season with salt and pepper and drain excess grease.
  3. In a mixing bowl, whisk together mayonnaise, ketchup, yellow mustard, sweet pickle relish, white vinegar, garlic powder, onion powder, and paprika until smooth.
  4. In a large bowl, combine the cooled macaroni and beef. Pour dressing over and mix, then add cheddar cheese, pickles, onion, lettuce, and tomatoes.
  5. Cover and refrigerate for at least 1 hour before serving. Add extra lettuce before serving if desired.
