Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the sliced zucchinis, chicken pieces, cherry tomatoes, red bell pepper, red onion, and minced garlic.
In a small bowl, whisk together the olive oil, oregano, basil, paprika, salt, and black pepper. Pour this mixture over the chicken and vegetables, and toss until everything is well coated.
Spread the mixture evenly in a large baking dish.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
Remove from the oven and sprinkle the crumbled feta cheese on top. Return to the oven for an additional 5 minutes to melt the cheese.
Garnish with fresh parsley before serving.
